American No-Salt Kimchi

How to use American No-Salt Kimchi

  • You can use American Kimchi almost anywhere!

  • Put some on your sandwich or burger

  • Top your rice.

  • Top nachos or add to chip dip.

  • Place inside your Quesada or Taco 

  • As a side dish 

  • Use as a garnish for soup

 

DO NOT COOK IT if you want the probiotics - cooking will kill the probiotics.

Tools needed for making Kimchi:

  1. Quart Jars - - most recipes are based on a quart jar. But you can use any size that you have and adjust the recipe. I like pint jars to give away.

  2. Vapor lock lid - These are the easiest way to hold the bubble locks in place. The lids to the right have Bubble locks.

  3. Bubble Locks - These are the easiest way to allow the gases to escape without allowing air into your Kimchi. These are here in case you need to replace broken bubble locks.

  4. Weights (Glass) - Glass weights are the easiest and safest way to keep your vegetables under the liquid.

  5. Sharp Knife - A must! You will be cutting almost all of your vegetables.

  6. Food processor (optional) - This can be an easy way to chop your vegetables. Be careful, and a food processor can over chop quickly.

  7. Mandoline (optional) - This tool has cut more fingers than knives. If you use it on, please be careful!

  8. Canning funnel - This tool helps to get more vegetables in the jar and less on the countertop.

  9. Fine-mesh colander (optional) - For straining the liquid from vegetables. 

  10. Pounding tool - (for tamping your vegetables down before adding the glass weight or to help start breaking apart the vegetables.) DO NOT USE METAL INSIDE YOUR JARS! Any wooden spoon will work. 

  11. Tray - (to place the jars on in case of bubbling over) - there is a small chance that one of your jars would overflow.

  12. Storage Lids - (Stainless Steel Lid) - once you have your American Kimchi to the level you want, you will take the bubbler off, place a lid, and put the jar into the refrigerator.

  13. Water Filter - You do NOT want to use tap water. If you need to use tap water, run it through a water filter and let it sit for at least 24 hours to allow the chlorine to evaporate off.

  14. First aid kit - You should have a first aid kit close whenever you use a sharp tool, knife, or mandoline. Every home should have one!
